Chufa, tiger nut or earth almond
aka the primordial tuber
The chufa does not belong to the nuts, seeds, vegetables or grains! So what is it? It is a tuber that grows between the roots of a type of grass (cyper grass). Chufas are naturally gluten-free and allergen-free, as they do not belong to the nut family, but to the root vegetables.
